Pumpkin Perfection: Fall Recipes to Relish

1. Pumpkin Pancakes

Ingredients:

  • 1 cup all-purpose flour
  • 1 tablespoon sugar
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon nutmeg
  • 1/4 teaspoon salt
  • 1 cup milk
  • 1/2 cup pumpkin puree
  • 1 egg
  • 1 tablespoon vegetable oil
  • Butter or oil for cooking

Instructions:

  1. In a bowl, mix flour, sugar, baking powder, baking soda, cinnamon, nutmeg, and salt.
  2. In another bowl, combine milk, pumpkin puree, egg, and oil.
  3. Mix wet ingredients into dry until just combined.
  4. Heat a skillet over medium heat and grease with butter. Pour batter and cook until bubbles form, then flip.
  5. Serve warm with syrup or whipped cream!

 

2. Pumpkin Soup

Ingredients:

  • 2 tablespoons olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 4 cups pumpkin puree (fresh or canned)
  • 4 cups vegetable or chicken broth
  • 1 teaspoon cinnamon
  • Salt and pepper to taste
  • Optional: cream for garnish

Instructions:

  1. In a large pot, heat olive oil over medium heat. Add onion and garlic, cooking until soft.
  2. Stir in pumpkin puree and broth, then add cinnamon, salt, and pepper.
  3. Bring to a boil, then reduce heat and simmer for 20 minutes.
  4. Blend until smooth, then serve hot with a swirl of cream if desired.

 

3. Pumpkin Muffins

Ingredients:

  • 1 cup all-purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon cinnamon
  • 1/2 teaspoon salt
  • 1/2 cup sugar
  • 1/2 cup pumpkin puree
  • 1/4 cup vegetable oil
  • 1/4 cup milk
  • 1 egg
  • Optional: chocolate chips or nuts

Instructions:

  1. Preheat oven to 350°F (175°C) and line a muffin tin with liners.
  2. In a bowl, mix flour, baking powder, baking soda, cinnamon, salt, and sugar.
  3. In another bowl, combine pumpkin, oil, milk, and egg.
  4. Add wet ingredients to dry and stir until just combined. Fold in chocolate chips or nuts if using.
  5. Fill muffin cups and bake for 20-25 minutes or until a toothpick comes out clean.

 

4. Pumpkin Pasta

Ingredients:

  • 8 oz pasta (your choice)
  • 1 cup pumpkin puree
  • 1/2 cup heavy cream
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon nutmeg
  • Salt and pepper to taste
  • Parmesan cheese for serving

Instructions:

  1. Cook pasta according to package instructions; drain and set aside.
  2. In a large skillet, combine pumpkin puree, heavy cream, garlic powder, nutmeg, salt, and pepper over medium heat. Cook until heated through.
  3. Toss the cooked pasta in the pumpkin sauce until well coated.
  4. Serve with grated Parmesan cheese.

 

5. Pumpkin Rice Krispie Treats

Ingredients:

  • 3 tablespoons butter
  • 1 package (10 oz) mini marshmallows
  • 1/2 cup pumpkin puree
  • 1 teaspoon pumpkin spice
  • 6 cups Rice Krispies cereal

Instructions:

  1. In a large pot, melt butter over low heat. Add marshmallows and stir until melted and smooth.
  2. Stir in pumpkin puree and pumpkin spice until well mixed.
  3. Remove from heat and add Rice Krispies, stirring until fully coated.
  4. Press mixture into a greased 9x13-inch pan. Allow to cool before cutting into squares.
